Creamy Tomatillo and Avocado Salsa

Though an avid appreciator of salsa in its chunky, vegetable-laden form, I’ve never really been able to get behind salsas and dips of the creamy variety.  I don’t know if it’s a texture issue or what, but dipping a crispy fried chip into a bowl of creamy sauce has always felt sort of odd.  The two dispositions of the chip and dip are so different, and yet so uniformly rich, it just feels like gilding the lily to combine one with the other.  At least, that’s what I used to think, until I innocently whipped up a batch of this super creamy, super flavorful salsa and, oh, man, I now think there can never be enough of this salsa available in the world at any given time.  Mark my words, if I know this salsa is available anywhere, at any time, I am going on a one-woman mission to find it and eat it.  All of it.

This salsa is other-worldly.  The absolutely spot-on spiciness of the jalapenos is expertly balanced by the cool creaminess of the avocado and sour cream, and the tartness of the tomatillos and citrus works effortlessly to round everything out.  With bunches of fresh herbs and just the right amount of kicky garlic, I don’t think there is a more perfect creamy salsa in existence.  It’s cool, spicy, and complex, and it practically begs to dress up a crisp, cold salad.  I am also willing to bet that this salsa, folded into a pile of freshly poached or grilled chicken that has been shredded and combined with some punchy chunks of bell pepper, would make the best chicken salad known to all of humankind.  If I hadn’t already eaten all of this particular batch of salsa you see here, I would be making that exact chicken salad right now.  Which reminds me, I need to buy some more avocados.  And tomatillos.  And sour cream.  Excuse me, I have to go now.

I still can’t say I am a convert to all creamy salsas and dips (my preference still sits firmly in the chunky vegetable camp), but this entry into the fray certainly goes a long way towards persuading me that perhaps I should pay a little more attention to the world of creamy salsas.  If they taste half as good as this salsa, I can only imagine what I’ve been missing out on all these years.

Creamy Tomatillo and Avocado Salsa

2 fresh jalapeno peppers

4 fresh tomatillos (or green tomatoes, if you’re looking for a use for them)

2 ripe avocados, peeled and pitted

½ small yellow onion, chopped

1 cup chopped flat-leaf (Italian) parsley

¼ cup chopped cilantro

4 large cloves garlic, chopped

juice of 1 lemon

juice of 1 lime

1 cup sour cream (the original recipe called for low fat, but I used full fat and it was just fine)

salt and pepper to taste

In a small saucepan, cover the jalapenos and tomatillos (or green tomatoes) with water and bring to a boil over high heat.  Cook at a simmer for 10 minutes, stirring occasionally.  Remove from the heat, drain, and allow to cool slightly.

In a blender or food processor, combine the cooked jalapenos and tomatillos, avocado flesh, onion, parsley, cilantro, garlic, and lemon and lime juice.  Blend or process on low speed for 20 seconds until pureed, stopping to scrape down the sides as needed.  Pour the mixture into a medium bowl and stir in the sour cream.  Add salt and pepper to taste.

If you desire a less spicy salsa (though this is not what I would call a super spicy salsa, it definitely has a bit of a kick to it), you can cut open the jalapenos after cooking and scrape out the seeds.  Your salsa will still have some spice to it, but it will be markedly less so than if you had left the seeds intact.

Cider Pressing and Two Kinds of Cupcakes

A few weeks ago, when summer had let us know it was over by summoning its friend autumn to release the Portland rains, we celebrated the beginning of fall by hosting a cider pressing at our house.  I say that casually, as though we’re used to doing such things, but, for us, having a large group of people over is about as common as having a large group of bears over.  (Okay, so maybe people coming over just marginally wins over bears coming over, being as though we’ve had a bunch of bears over, let’s see, never, and we tend to have people over to our house at a rate of about one instance per year.  So, fine.)

Aversions to entertaining aside, the cider pressing was a huge success.  My husband’s aunt and uncle drove out from the coast with their cider pressing machine, set it up just outside our garage, and, as if by magic, hordes of people began to appear with apples and pears aplenty.  Hordes of people we had invited, but, still, hordes in any case.  One cousin of my husband’s brought several hundred pounds of pears from his own tree.  That’s tree, singular, not plural.  His truck, back bumper slung low to the ground, was filled with bin after bin of pears, and I could hardly believe that one tree had managed to produce so much fruit.  The kicker was, he said the tree had actually produced a fairly low yield that year.  Those hundreds of pounds of pears were a small harvest.

The pears, combined with apples of all sorts, made incredible cider.  Tart and sweet, it was the freshest beverage I think I’d ever had.  The biggest hit of all, however, might have been the cider press itself.  With its efficient design and wonderfully growling motor, it attracted people of all ages.  No matter if you were a child or an adult, there was no better place to be than standing at the helm of the press, feeding it with whole apples and pears, watching the press rapidly shred and pulp the fruit, then slowly and satisfyingly hand cranking the actual pressing plate down upon the pulp, squeezing out the fresh juice.

As the machine was starting to slow its production, we all convened in the kitchen to dish out an enormous potluck meal.  There was a fresh tomato tart, a selection of several incredible salads, grilled sausages, a baked polenta dish, macaroni and cheese made in a crock pot (seriously, did you know you could do that?  ‘Cause I didn’t and now I kind of feel like I’ve been missing out), pesto pasta, smoked salmon, Indian food, a peach cobbler, one gigantic chocolate cake, and, because I like no better excuse to bake than having the promise of many mouths to feed, two types of very fall-themed cupcakes.

Let’s be honest, even before cupcakes became the dessert de rigueur, then quickly became the most maligned and passé dessert on the planet (oh, how quickly food trends come and go), I think everyone could appreciate how wonderfully portable, casual, and delicious cupcakes are.  You don’t need a plate and fork when you eat a cupcake.  You don’t even need a table or chair, since you can eat a cupcake while walking around, kicking a soccer ball, or simply standing in one place and enjoying the company of friends.  But even better than the fact that cupcakes are handy, simple to make, and adored by children every where, is the realization that when you make cupcakes, you can make many types at a time, which means you can then eat many types, which I totally did, with no shame whatsoever.

Applesauce Cupcakes with Penuche Frosting

Applesauce Cupcakes

2 cups unbleached all-purpose flour

1 ½ teaspoons baking powder

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon ground powdered ginger

¼ teaspoon salt

2/3 cup unsalted butter, at room temperature

1 cup packed light brown sugar

2 large eggs

1 teaspoon pure vanilla extract

¾ cup unsweetened, unfiltered apple juice

1 cup unsweetened applesauce

Preheat oven to 350 degrees Fahrenheit.  Line a muffin tin with 12 paper liners, or grease and flour the tin.

Sift together the flour, baking powder, cinnamon, nutmeg, ginger, and salt, then set aside.  With an electric mixer, cream the butter and brown sugar until fluffy.  Beat in the eggs one at a time, then add the vanilla.  Alternate adding the juice and the flour mixture, beating well after each addition.  Fold in the applesauce.

Spoon the batter into the prepared muffin tin.  The cups will be very full.  Bake for 25 to 30 minutes, until a cake tester inserted into a cupcake comes out clean.  Remove the cupcakes from the tin (if they are too hot and delicate to handle at first, you can allow them to cool for 10 minutes before attempting to remove them from the tin) and cool completely on a rack before frosting.

Penuche Frosting

Adapted from Pillsbury: Best Cookies Cookbook

3 tablespoons unsalted butter

½ cup firmly packed light brown sugar

¼ cup milk

2 to 2 ½ cups powdered sugar

In a medium saucepan, combine butter and brown sugar and bring to a boil over medium heat.  Cook at a light boil for 1 minute, stirring frequently, until mixture has thickened.  Remove from heat and cool for 10 minutes.  Add milk to cooled mixture and beat until smooth.  Beat in enough powdered sugar to reach desired frosting consistency (start with 2 cups, beat for a few minutes, then add more powdered sugar if you find your frosting is too runny).  Frosting will remain somewhat loose, as it is not meant to be fluffy.

Gingerbread Cupcakes with Lemon Cream Cheese Frosting

Gingerbread Cupcakes

¼ cup unsalted butter, at room temperature

½ cup sugar

½ cup unsulphured molasses

1 large egg

1 ½ teaspoons ground powdered ginger

1 teaspoon ground cinnamon

½ teaspoon ground allspice

½ teaspoon ground nutmeg

1 ¼ cups unbleached all-purpose flour

1 teaspoon baking soda

½ cup boiling water

Preheat oven to 350 degrees Fahrenheit.  Line a muffin tin with 12 paper liners, or grease and flour the tin.

Using an electric mixer, cream the butter and sugar until light.  Add the molasses and egg and beat until smooth.  Add the ginger, cinnamon, allspice, nutmeg, and flour, and beat until well blended.  In a small bowl, dissolve the baking soda in the boiling water (the mixture will foam up).  Add the baking soda and water mixture to the batter and mix until smooth.

Spoon the batter into the prepared muffin tin.  Bake for 20 minutes, until the cupcakes spring back when lightly touched.  Cool cupcakes for 5 minutes, then remove from tin and set on a rack to cool completely before frosting.

Lemon Cream Cheese Frosting

2 tablespoons unsalted butter, at room temperature

2 ounces cream cheese (a generous ¼ cup), at room temperature

2/3 cup powdered sugar

½ teaspoon finely chopped or grated lemon zest

½ teaspoon fresh lemon juice

Using an electric mixer, cream the butter and cream cheese together until smooth.  Beat in the powdered sugar until fluffy.  Add the lemon zest and lemon juice and beat until smooth.

Panko-Crusted Sole, a Dinner in 20 Minutes

Even though I work from home, there are still days when I find it inexplicably difficult to get dinner on the table at a reasonable hour.  Of course, you must realize that, having a child who wakes up at negative zero o’clock in the morning, we also have a child who must go to bed quite early in the evening, which means that our reasonable dinner time tends to occur at an hour when the only other people even considering a meal happen to be 80 years-old or, well, babies.

We are not, as you might have guessed, frozen pizza sort of people (and if you are a frozen pizza sort of person, please know that I hold no judgment against you), so when I need to get a meal on the table fast, I tend to look towards foods that are, on a basic level, fast cookers.  Sole, delicate as it is, falls wonderfully into this category.

You may think that because this meal appears to use a great deal of dishes that means it is complicated or fussy.  Not the case.  The majority of the dishes used are plain old dinner plates, which can be rinsed off and dried in seconds flat, or, even easier, simply thrown in the dishwasher.  There is no real measuring involved, and no special tools.  The fish cooks in one pan, and it cooks for quite literally just a minute on each side until it is done.  Cooking frozen fish sticks in an oven takes longer to prepare than this meal, and I guarantee you these sole fillets are about a thousand time better than any frozen fish stick you’ll ever meet.

Most convenient of all, however, is the fact that both kids and adults love this meal.  A crispy fillet of panko-crusted sole, slices of avocado, and carrot sticks is a well-appreciated meal for the 5-and-under set.  For a more adult-centric presentation, I place the sole fillets on a pile of greens, slice up some tomatoes and avocados, then drizzle on a simple vinaigrette (one part balsamic vinegar to two parts olive oil, whisked with a fork until thick and then seasoned with salt and pepper).  We’re sitting at the table in twenty minutes, tops.  The food, fresh and crunchy, disappears even faster.

Panko-Crusted Sole

1 pound thin sole fillets

roughly 1 ½ cups unbleached all-purpose flour

2 large eggs

about 2 cups panko bread crumbs

salt and pepper

olive oil

Set three large dinner plates in a row.  Put the flour on the first plate, and season the flour with a generous amount of salt and pepper.  On the second plate, beat the eggs, and put half of the panko on the third plate.

Heat a large skillet over medium heat (I use a cast iron skillet, but nonstick would also work).  Coat the pan with 1 tablespoon of olive oil (slightly more if you are using a very big pan) and heat until it is almost shimmering.  Take a sole fillet, lightly dip it on both sides in the plate of flour, shake off any excess flour, then wet both sides of the fillet in the beaten egg.  Dip both sides of the fillet in the panko, then place the coated filet in the hot pan.  The oil should be hot enough that your sole sizzles when it hits the pan, but you should not see any plumes of smoke.  Repeat with another fillet.  Depending on the size of your pan, you should be able to cook in batches of 2 or 3 fillets at once.  Cook each fillet for 1 minute on each side.  Sole is very delicate and thin, so it needs to cook for hardly any time at all until it is done.  Heat up one tablespoon more oil in between each batch.

If your cooking pan is littered with a lot of panko crumbs, wipe it out with a paper towel in between cooking each batch of fish, before you add more olive oil.  When you have used up most of the panko on the third plate, add the remainder of the panko to the plate and proceed (adding all the panko at once can sometimes cause it to clump after repeated fillet dippings).

When each sole fillet is done cooking, place it on a wire rack until you are ready to serve.

Serve sole with sliced vegetables, or on top of a salad, with lemon wedges for squeezing.
