Mango and Avocado Salsa

As the weather finally warms, I am growing ever more excited for the arrival of one of my most treasured summertime traditions: the non meal-meal.  The non meal-meal is exactly what you might ascertain it would be, given its name.  It is a meal that is comprised of many different things that do not, on their own, constitute a meal.  The non meal-meal can be anything one wants it to be, really.  It can be a handful of nuts, an apple, and half of a leftover biscuit.  It can be a log of string cheese and some crackers slathered with almond butter.  Sometimes, when no one is around to express displeasure at my oftentimes rather questionable eating habits, it can be a single bite taken from each container in the refrigerator that holds leftovers from throughout the week.

I’d like to blame my propensity for eating non meal-meals on a lack of food preparation motivation when the warm weather arrives, but, to be quite honest, I don’t really have an excuse for eating that way, so much as I just have an outright confession: I like to eat that way.  My favorite type of meal involves many small bites of many different things (hello, tapas), so grazing my way through the fridge and pantry is a pleasant and long held tradition of mine.

Occasionally, however, I will take this buffet approach of mine and apply it to an actual meal that needs to be, albeit very simply, prepared.  I’ll toss leftover roasted vegetables on some salad greens and sit down for a lunch that involves actual silverware, or, if I feel it must be done, I’ll briefly peel and chop a few items and then combine them into something that resembles an actual dish.

I’d like to tell you all that after I took the time to put this salsa together, I made sure to set some aside for the other people in the house who I am sure would have loved it.  But I did not.  Upon sampling a taste of this creamy, spicy, and sweet concoction, I immediately hoovered down the entire bowl, first with the aid of some tortilla chips, but then, realizing that the chips were merely a cumbersome vessel getting in the way of me and the salsa, I ditched the chips and proceeded to attack the salsa while armed with nothing more than a very large spoon.  Am I ashamed?  Absolutely not.  This salsa, filled with fresh fruit and invigorated by a kick of jalapeno, is nothing short of delightful, and nothing less than vigorously healthful.  Devoid of chips, you can make this salsa and call it a salad, then eat it on a bed of greens (or not) and call it lunch.  Or, if you are me, you can eat it any way you wish and just call it delicious.

Mango and Avocado Salsa

1 large mango, peeled and sliced into small chunks

1 large avocado, peeled and sliced into small chunks

juice of 1 lime

1 jalapeno pepper, chopped finely, seeds and white inner ribs removed and set aside

4 tablespoons of finely chopped red onion

2 tablespoons chopped fresh cilantro

1/4 teaspoon salt

In a small bowl, combine all of the ingredients.  Toss thoroughly with a spoon, then taste for seasoning.  If you want to add more heat to the salsa, add a small amount of the reserved jalapeno seeds, toss again, and taste.  Continue in this fashion until you have reached the spiciness you desire.

Pear and Mascarpone Pizza

There is pretty much no end to the dedication I will show in order to cobble together a dessert.  If I can make this dessert by mining the depths of my refrigerator, even better.  There is satisfaction to be found in saving food from eminent disposal, sure, but one can definitely intensify the delight of that satisfaction by churning out a dessert so unexpectedly fantastic, so effortlessly decadent, you might just have trouble believing that this delicious thing you just Frankenstein-ed into existence is a hodgepodge of leftover bits and pieces from other meals.

While it’s true that this recipe is based on using up a bit of leftover pizza dough (and by based, I mean that both literally and figuratively, since the pizza dough provides a crispy base for the pears and mascarpone, but also serves as a nice method for utilizing the last third of a batch of this dough), it by no means tastes like a second rate dessert.  That a very simple combination of ingredients can be joined together to make something this incredible seems almost unfathomable.

Softly sweet mascarpone cheese is baked into a deep, caramelized custard while it sits atop a bed of simple, fresh pears.  The humble pizza dough base, previously left to rest in the refrigerator for several days, transforms into a flaky, crispy pastry that achieves all the flavor of a Danish pastry dough, only with none of the work involved.  To top off the list of this dessert’s nearly unbelievable attributes, the entire thing, luscious and toothsome as it is, is made with a total of only three tablespoons of sugar.

Truthfully, I am finding it exceptionally difficult to do anything other than gush about this luxurious pastry concoction, because, to be quite honest, I had no idea it would turn out this good.  When I took a bite of it, I actually froze a little and thought, “What IS this?”  Even though I knew exactly what it was, since I had just taken the time to make it.  Now, one week later, having worked my way through several bites, I feel a bit more prepared to answer my own question.  What is this?  It is simple, it is delightful, and it is not to be missed.

Pear and Mascarpone Pizza

If I were to make one very important suggestion about this dessert, it would be that you use a very well-rested pizza dough that has had time to ripen in the refrigerator.  What do I mean by ripen?  Well, the longer you let your dough rest in the refrigerator, the more time you are giving the enzymes in the flour to convert to sugar.  This extra bit of natural sweetness in the dough not only gives it a great flavor, but it also allows the dough to caramelize a bit while baking in the oven, giving the dessert base a much more intense flavor and pronounced crispness without the need for added butter or sugar.

Pizza dough (preferably aged in the refrigerator for 2-3 days) for 1 pizza

2 pears, peeled, cored, and cut into thin slices

1 tablespoon turbinado or raw sugar

4 ounces mascarpone cheese

1 large egg

2 tablespoons white sugar

1 tablespoon freshly squeezed lemon juice

1 teaspoon pure vanilla extract

Preheat oven to 400 degrees F.

Hand stretch dough into a 12-14 inch round.  Place dough on a parchment-lined baking sheet.  Sprinkle half a tablespoon of turbinado sugar over the surface of the dough.  Reserve the remaining half tablespoon of turbinado sugar and set aside.

Arrange the sliced pears over the top of the sugar-sprinkled dough.  I found it very easy to fit all the slices neatly on the round by arranging them in concentric circles, but you may arrange the pears however you want.

Combine the mascarpone cheese, egg, white sugar, lemon juice, and vanilla.  Whisk thoroughly to combine.

Drizzle the mascarpone mixture evenly over the pears, covering as much of the surface as possible, but leaving a 1/2 inch of dough uncovered at the edges.  Sprinkle the pears and cheese with the remaining half tablespoon of turbinado sugar.

Bake pizza for 25-30 minutes, until the cheese has caramelized in places and the edges of the dough have turned golden.  Cool slightly before eating.

Six Threes Ice Cream

Dear Summer,

Did we do something to anger you?  I only ask because it seems as though you have been avoiding us.  Here we are, the first week of June, and you are nowhere in sight.  I can’t help but think that maybe you are feeling a bit hesitant about joining us this year.  Maybe you had a great time hibernating during the months you were not with us, making you decide that you’d rather stay asleep a few more weeks instead of prodding your good friend The Sun in the ribs and making a good argument for spending some time with us.  We’re pretty fun, you know.  We like going in the pool and hitting baseballs in the backyard while our skin warms in the heat of the afternoon, and the hammock is all cleaned off and good to go.  Basically, we’re ready whenever you are.

Look, I even made a little something to celebrate your arrival.  My husband’s family has this great ice cream recipe that I had been dying to make.  I first tasted it at a family reunion last summer—remember that?  You were sort of there, Summer, but mostly in name rather than in feel (it was extremely cold and wet last August, as you may recall, but I promise I am in no way holding that against you).  Anyhow, my husband’s family made a huge batch of this ice cream.  They took turns hand churning it, and when it was done they called to all of the children to come and have an inaugural taste of the ice cream straight from the dasher.  All of the children were feeling uncharacteristically shy, so I swiped my finger against the dasher and demonstrated how non-poisonous and definitely delicious the ice cream was.

As you may also recall, the children had a rather difficult time getting to the ice cream covered dasher after that, such was my devotion to gobbling that thing clean before anyone else could snitch a taste.  I wouldn’t say I went so far as to push any children aside while protecting my ice cream sample, but that was only because I happened to be taller than all the children, allowing me to conveniently hold the dasher up much higher than they could reach, rendering unnecessary any sort of pushing or jostling on my part.

So, I decided that, in anticipation of your arrival, I would make some of this ice cream.  It is dead simple to assemble, and it tastes supremely fresh and cooling.  The ice cream is egg-free, but it has the smooth, soft, creamy texture of a custard-based ice cream. Do you know what the secret is, Summer?  It’s the banana.  The banana makes the ice cream so rich and luscious, you’d never know it was devoid of eggs.  I tell you, this is the perfect ice cream to start with if you’re feeling hesitant about making homemade ice cream.  It really is foolproof.  Plus, the taste bears a strong resemblance to that of a Creamsicle, which not only gives it points for childhood nostalgia, but also for maximum enjoyability.

I hope we see you soon, Summer.  Rumor has it you’re going to be making an appearance this weekend, but, quite honestly, I can’t really bring myself to believe that prediction, what with how little we’ve seen or sensed of you thus far.  Don’t get me wrong, I want to see you, but I don’t know if I can handle any more stilted anticipation.  If you do happen to show up, believe me, I’ll be more than happy to eat my words—right along, in fact, with a nice bowl of this delicious ice cream.

Six Threes Ice Cream

The original recipe, which uses three of each measure of ingredients, makes enough ice cream to fill a very large hand cranked machine.  Since the ice cream machine I own only holds 1.5 quarts of finished product, I had to scale the recipe down by two thirds.  This, technically, does not make the ice cream I made a combination of six threes, but rather six ones.  However, since that name does not have nearly the clever ring to it as the original name, I have decided to just stick with calling it six threes ice cream.  Still delicious, just not as abundant.  If you have a larger ice cream maker, you should, by all means, scale the recipe up to make as much ice cream as you can.

Note: Be sure to follow the directions and keep the dairy and citrus ingredients separate until the dairy has been partially frozen in your ice cream machine.  If you add the citrus to the dairy beforehand, the acid in the citrus will cause your dairy to curdle.

1 ripe banana

1 lemon

1 orange, the zest finely grated or chopped

1 cup milk

1 cup cream

1 cup sugar

In a medium bowl, blend or mash the banana.  To this, add the finely grated or chopped zest of the orange.  Squeeze juice from lemon and orange, and combine with the mashed banana and orange zest.  Set aside.

In a large bowl, combine milk, cream, and sugar.  Whisk steadily until sugar is completely dissolved.

Add cream mixture to your ice cream maker, and allow to churn until it reaches the slush stage.

Add the fruit mixture to the slushy cream mixture, then churn according to manufacturer’s instructions (until, that is to say, you have ice cream).

Makes about 1.5 quarts of ice cream.
